Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

1. Prepare the Chicken

Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, paprika and Italian seasoning.

2. Sear Until Golden

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.

3. Make the Garlic Sauce

Reduce the heat to medium. Add the butter and minced garlic to the same skillet. Cook for about 30 seconds, stirring constantly, until fragrant.

4. Make It Creamy

Pour in the chicken broth and gently scrape the bottom of the skillet to release all the flavorful browned bits.

Add the heavy cream and Parmesan cheese. Stir until the cheese has melted and the sauce becomes smooth and creamy.

5. Finish the Chicken

Return the chicken to the skillet and spoon some of the sauce over the top.

Reduce the heat and simmer for 5–8 minutes, or until the chicken is fully cooked and the sauce has thickened. The thickest part of the chicken should reach an internal temperature of 74°C / 165°F.

6. Serve

Garnish with freshly chopped parsley and a little extra Parmesan.

Serve immediately with pasta, rice, mashed potatoes or roasted vegetables.

Mastro Cook Tips 👨‍🍳

Don’t burn the garlic: Garlic cooks quickly. About 30 seconds is enough before adding the liquid.

Fresh Parmesan works best: Freshly grated Parmesan melts more smoothly and gives the sauce a richer flavor.

Too thick? Add a splash of chicken broth.

Too thin? Let the sauce simmer uncovered for another 2–3 minutes.

Perfect With

Try serving this creamy chicken with:

  • Fettuccine or spaghetti
  • Creamy mashed potatoes
  • Basmati rice
  • Roasted potatoes
  • Steamed broccoli
  • Garlic bread

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently over low heat and add a small splash of cream or chicken broth to loosen the sauce.
